不需豪饮,一杯即可。

在微醺中,整个世界变得轻松、愉悦、闪亮。

Use a decent wine glass.

首先,选个合适的杯子

    There are many different shapes meant for different wines,  but in general, all you need is a good Bordeaux glass, or a large white wine glass. The best are made by Reidel, but Schott Zwiesel and Spiegelau are also very good.

    喝不同的酒,有不同的杯子。但总的来说,你真正需要的只是一个好的波尔多杯,和一个大号的白葡萄酒杯。这儿推荐Reidel,肖特圣维莎和诗杯客乐三个牌子。

2.Notice the density of the color (more important with aged wines)观察颜色的浓度(对陈酿酒尤其重要)

 


    上图中,同是赤霞珠,左边是新酿,紫红色,右边是陈酿,砖红色。浓度也不同,你可以看到,经过时间的洗涤,葡萄酒里的杂质化掉了,所以陈酿更清澈些,能透视看到酒杯后的字。

 


注意:


Hold the glass by the stem or base when looking at the wine to avoid getting the glass dirty or warming the wine.


拿酒时,握高脚杯的“脚”,避免把酒杯弄脏或把酒暖热

 

SMELL闻

Different shaped wine glasses will affect how the wine smells.

不同的酒杯形状会影响酒的气味,但不管你用什么杯子,请确保把鼻子伸进去。

 

 


2.Notice primary aromas such as flowery, fruity, or herbal aromas感受一类香气:花、果、草药、泥土石头等芳香

3.Notice secondary and tertiary aromas such as woody, yeast or aged aromas.感受二类、三类香气:木质的、酵母、陈酿等气味

 


注意:


Aromas or rotten wood or dirty clothes indicate wine which is NOT GOOD. Sellers usually don’t tell you this, but it is not unusual to get  bad bottle of wine, and it will usually be replaced free of charge. 如果有腐烂木头、脏衣服的气味,说明酒已经变质了。卖家一般不会告诉你这些,但,有时在酿造或者装瓶过程中,酒体可能会被木塞、环境等因素污染,这时,你可以要求免费换瓶。

 


The smell tells a lot about the wine, and with practice you will realize how important it is to spend a lot of time smelling your wine.气味是品酒很重要的一环,有经验的品酒师通过闻,就能断定酒的种类、品质。花足够的时间来欣赏酒香,也是非常美妙的体验~

 

 


TASTE尝

Take a sip and swirl it around your mouth to contact every area. Different parts of the tongue perceive different flavors, so the wine needs to really be swirled around to get the whole taste. 浅饮一口,在嘴里打旋,让酒充分接触口腔每个区域。舌头的不同位置感知着不同的味觉,所以,每一口酒都要包围整个味蕾,才能捕捉到这款酒的所有味道。

 

 


2.Notice identifiable flavors, acidity, sweetness, alcohol, and tannin.关注味道、酸度、甜度、酒精、单宁(鞣酸),这五项可以说是品酒的灵魂,你需要认真去考量每一项,体会、寻找,比较,然后得出自己的结论。(请对照随酒寄出的品鉴单。品鉴大师们在训练自我的时候,常常坚持每喝一款,都仔细品味,做好笔记。罗伯特坚持这个习惯已经13年了,相信你也可以!)

 

 


3.Notice the profile of the wine (how it tastes from the beginning to the finish)关注酒的整体轮廓(这一口酒从开始接触舌头到最终饮下的口感和后味的变化)

Enjoy it, don’t just taste it.


 Even if you don’t have the right glasses or a lot of background knowledge, anyone can enjoy wine. Everyone has different tastes, but we all appreciate balanced wines. Look for balance and any flavors that you appreciate in the wine. Sometimes the smells will remind you of other things or past events. Enjoy!

对于美酒,除了用嘴尝,更要用心品!

    即使没有合适的杯子,也不懂这酒的背景知识,但这都不妨碍我们来欣赏一瓶好酒。

    每个人口味喜好不同,但总体上我们在寻找平衡。酒的味觉越平衡,喝得感受就越好。

    另外,更重要的是,每个人在成长过程中,会有一些美好的回忆和体验,这些经历往往和一些气味、味道相互缠绕,被记忆在脑中。气味、记忆、感受这三者关系之密切,真的超乎你的想象!气味对情绪的影响也不容小觑!

“Wine Folly: The Essential Guide to Wine” by Madeline Puckette and Justin Hammack -This is a fun, easy to use guide to tasting wine with useful info about some different types of wines. It has great info-graphics. Available in Chinese!《把这瓶酒开了!》马德琳·帕克特,贾斯汀·海默克,这是一本轻松,入门级读物,一看就懂的品鉴、配餐知识,有很棒的地图解读。
